Manuel, originario de la ciudad de Talca, el año 2011 se muda a Santiago
a Estudiar Ing. Civil en Biotecnología, Durante su carrera trabajó en
laboratorios de extracciones, fermentaciones, biopolímeros y alimentos.
Siempre se apasiono por la bioeconomía y cómo se podían aprovechar
los subproductos de los procesos (mal llamados desechos) para hacer
otros productos
Transcurrido el tiempo, en el año 2015 realizó apoyo en el área técnica de
una consultora de i+D en el área de la agroindustria de la zona central, le
frustraba que la mayoría de los proyectos nunca se concretaban a pesar
de tener una rentabilidad económica, social y medioambiental positiva
En el año 2017 junto a Valentina Lira decidió fundar The Brunch Company,
para materializar las oportunidades que veían en la alimentación
saludable en base al patrimonio alimentario local.
El 2017 recibió reconocimiento por Allbiotech entre los 100 jóvenes
líderes en biotecnología de latam.
El 2018 lanzó su primera línea de productos que fue
bee natural, una limonada 100% natural, endulzada
con miel de quillay y fabricada con frutas de producción
local, unos meses después lanzó hakari una línea de
snacks deshidratados de fruta local.
En el camino de emprender se dio cuenta que había
una cantidad de subproductos mucho mas grande
de la que había imaginado y que no existe mayor
asociatividad con los pequeños productores que
permitiese aprovecharlos.
El año 2019 se dió cuenta que si bien desarrollaba
alimentos saludables con identidad, estos tenían un
costo elevado y no podía ser una solución efectiva
al gran problema de malnutrición que vivimos como
país y como región. Luego de analizar sus procesos
y optimizarlos se dio cuenta que la clave era saber
utilizar bien los subproductos.
Durante el año 2020 en la cuarentena desarrolló
la versión actual de hakari, un snack deshidratado
crujiente en base a fruta fresca y subproductos, más
asequible, más sustentable y que permite mejorar la
valorización del trabajo campesino.
El año 2020 la primera línea Bee Natural fue
reconocidas por Transforma Alimentos, como una de
las 50 innovaciones alimentarias .
El año 2021 inició las ventas de sus productos y fue
reconocido con el Premio Nacional de Innovación

El año 2022 la línea comenzó su fase de escalamiento,
integrando trabajo con productores para aprovechar
sus subproductos. La línea Hakari fue reconocidas
por Transforma Alimentos, como una de las 50
innovaciones alimentarias
Manuel, es un visionario, ha podido ver, analizar
y descubrir oportunidades que favorecen a la
comunidad, se encuentra en constante búsqueda de
mejoras e innovación.
